healthy_eatingHere’s a healthy eating way to serve your stuffing on Christmas day, that adds in a serve of veggies too.
Why not grab a mixture of red and green capsicums to add to the festive theme?
You could also cook these in smaller healthy eating portions by chopping the capsicums in half before stuffing; and cooking with foil over the top for the first ten minutes.
These also make a delicious vegetarian option (just omit the bacon).

Ingredients:

  • 4 small red capsicums, lids removed and kept, seeds and membranes removed
  • 1 tbsp olive oil + olive oil spray
  • 1 medium onion, peeled and finely chopped
  • 2 rashers of lean bacon, finely diced
  • 2 cups of cooked brown rice or wholemeal cous cous or wholemeal breadcrumbs
  • 1 cup of mixed herb leaves including parsley, thyme, and sage
  • Zest of ½ a lemon
  • 1 green apple, peeled and finely chopped
  • 4 tbsp sultanas
  • 4 tbsp pistachios, cashews or hazelnuts, chopped
  • 1 egg, lightly beaten
  • 50g low fat feta, crumbled

Method:

  • Preheat the oven to 180C.
  • Spray the inside and outside of the capsicums and place on a baking tray.
  • Heat the oil in a frying pan over med/high heat.
  • Cook the onion and bacon until the onion is tender and the bacon is getting crispy.
  • Add the onion and bacon to the rest of the ingredients in a large bowl. Mix well with your hands to combine.
  • Stuff the mixture into the 4 capsicums and place the lids back on top.
  • Cook in the hot oven for around 20 minutes or until the tops are golden.

Serves: 4-8. Calories per serve: 138-275.
