Running short of time for a healthy eating dinner for the family? Look no further than a veggie packed frittata to save the day!
It’s a great idea to always keep eggs in the house, as it means you always have the base for a healthy eating meal.
Feel free to substitute for whatever vegetables or cheese that you have on hand.
Serve with a big green salad and you’ve got dinner sorted.

Ingredients:

  • 1 red onion, peeled and finely diced
  • 2 cups baby spinach
  • 1 cup small broccoli florets
  • 1 tbsp olive oil
  • 6 large eggs
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper to taste

Method:

  • Preheat your oven to 220C.
  • In an ovenproof frying pan, heat the oil over med/high heat.
  • Cook the onion for 2 minutes, then add the broccoli and cook for a further 5 minutes.
  • Add the baby spinach and stir fry for 1 minute.
  • In a separate bowl, whisk the eggs together and season to taste.
  • Pour the egg mix into the frying pan and tilt the pan to ensure even coverage.
  • Sprinkle with the Parmesan and then cook in the oven for 20 minutes or until golden brown.

Serves: 4. Calories per serve: 190.
