DELICIOUS dairy free and low in sugar our Raspberry Custard Tart is sure to be a hit with all healthy mums trying to eat healthy and lose baby weight – at only 133 cals per serve!
Raspberry Custard Tart
- Whisk 4 eggs with 2 tbsp of brown sugar, 2 tbsp of castor sugar and 1 tsp of vanilla extract.
- In a pot place 1 tbsp of custard powder and slowly make a paste with 1 cup of almond milk until it is all combined
- Over a medium heat stir until it thickens up.
- While cooling spray a spring form tin with olive oil spray and layer 4 sheets of filo pastry making sure you spray between layers so they stick together.
- Add 100grms of frozen raspberries to the tin.
- Combine the egg mixture into custard constantly whisking so eggs don’t separate. Place in 180° oven for 40 – 45 mins.
- Cool in tin.
Serves 8 at 133 calories a serve.
