Ingredients

  • 450g boneless chicken thighs cut into strips
  • 1 broccoli  cut into florets
  • 100g snow peas
  • 2 cups baby spinach leaves
  • 1 Bok Choy
  • 1 tbsp of coconut oil
  • 1 tbsp of Tamari sauce
  • 1 lemon
  • 1/2 cup cooked Quinoa
  • 1 tbsp of natural peanut butter
  • Coriander leaves

Method

  • Cook quinoa as per instructions.
  • Heat coconut oil in a fry pan,
  • Add chicken thighs and cook until brown.
  • Add broccoli, snow peas, spinach and Bok Choy cook until tender.
  • Add Tamari sauce and peanut butter mix until combined.
  • Once chicken is cooked add the cooked quinoa and lemon juice and stir through.
  • Top with fresh coriander leaves.
