Lose Baby Weight- Healthy Scones

Ingredientshealthy mummy smoothies

Scones

  • 3 cups wholemeal self raising flour
  • 1 1/2 cups almond milk
  • 1 tbls almond milk for brushing
  • Juice and rind of 2 oranges
  • 3 tbls maple syrup
  • 1/4 cup mini dark choc chips

Date Jam

  • 6 medjool dates chopped
  • 1 cup water
  • 1 tbls coconut sugar
  • Pinch of mixed spices (cinnamon, nutmeg)

Method

  • Make your jam first by mixing all the listed ingredients together in a small saucepan
  • Bring to boil, simmer until it thickens just a little
  • Allow to cool, then blitz in processor and set aside
  • Next make your scones mix all  together in a bowl (expect 1 tbls almond milk)
  • Roll out on a floured surface until about 2 cm thick and cut out rounds (I used a small wine glass) and keep re-rolling dough to use it all up
  • Place on a baking tray lined with baking paper, brush with remaining almond milk
  • Bake in 160 degrees for 6-8 mins.

Makes approx 23 scones @ 79 calories each
Makes approx 180gm of Jam, 18 teaspoons. @ 27 calories per tsp
