While we all know how important fish is to our diet, especially when trying to lose weight and follow a healthy eating planit can be tricky to find new and interesting ways to prepare seafood.
None the less, it’s important to keep on keeping on when it comes to this sea dwelling staple.
High in protein and packed full of essential vitamins, minerals and fatty acids, fish, particularly white fish as featured in this recipe, is extremely low in calories, making it perfect for when we’re trying to shed a few kilograms.
Steaming, baking and grilling a fresh piece of fish are all great, diet friendly options for seafood, but what to top it with?
This mediterranean inspired dish tops white fish fillets (think whiting or similar) with olive oil, vine ripened tomatoes, lemon juice and crumbly fetta, creating a mouthwatering meal, with less than 350 calories!
Mediterranean cuisine is reported to be some of the healthiest in the world, due to the fresh ingredients, healthy fats and plethora of colourful veggies and metabolism boosting spices. It also tastes amazing. What’s not to love?

Ingredients
  • 4 x white fish fillets (whiting, snapper, sea bass etc)
  • 2 tbsp extra virgin olive oil
  • 3 x vine ripened tomatoes, deseeded and chopped into chunks
  • 1 x large lemon, juiced
  • 125g reduced fat fetta cheese, crumbled
  • 1/4 cup fresh herbs (parsley, basil etc), coarsely chopped
  • 2 x tsp mixed herbs
  • Olive oil spray
Directions
  • Preheat oven to 180C
  • In a small bowl, combine the tomatoes, fetta, basil, dried herbs and lemon juice.
  • Lightly spray a large baking dish with olive oil spray to prevent fillets sticking.
  • Place fillets in baking dish.
  • Drizzle with olive oil then spoon over the tomato mixture, gently pressing into the top of the fillets with a spoon.
  • Place in oven and bake for 30 minutes or until the fish is cooked through the fetta has softened and started to turn golden brown.
  • Serve immediately.
