Here is our first submission for the Healthy Baking Competition that we are running on our Private Facebook Support Group where members can send in their own super creative, healthy and YUMMY baking recipes that can be enjoyed while following a healthy eating plan.

Lose Baby Weight-Healthy Mint Matcha Slice

Ingredients

Base

  •  1/2 cup desiccated coconut
  • 1 cup almond meal
  • 1 cup pitted dates (chopped and soaked in boiling water to soften)

Filling

  •  1 & 1/2 cups soaked raw cashews (best soaked over night)
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil
  • 1 1/2 tsp Natvia
  • 2 tsp high quality 100% matcha green tea powder
  • 2 tsp peppermint essence (or less if you don’t like strong mint flavours)
  • 1 tbs honey

Chocolate Topping

  • 1/2 cup coconut oil
  • 1/2 cup cacao
  • 1 tbs natural peanut butter
  • 1 tbs pure maple syrup
  • 2 tbs Natvia (or to your desired sweetness)

Method

  • In a food processor, process all of the base ingredients until well combined and add around 1 – 2 tbs of water to form a paste.
  • Place base mixture in lined slice tin and press down, then place in fridge to set.
  • Place all the filling ingredients in a food processor and blend until smooth and creamy. Smooth out the filling on top of the base layer and place back in the fridge.
  • In a saucepan, melt the coconut oil and the rest of the chocolate topping ingredients and stir until peanut butter is melted and mixture is smooth.
  • Ensure base and filling mixture is cold before adding chocolate layer or the chocolate will melt the filling.
  • Once chocolate topping is cooled slightly spread on top of slice and place back in fridge to set.
  • Once set (about 1hour) cut into 16 slices
  • Store in fridge for about 2 weeks or freezer for about 3 months
