Lose Baby Weight-Beetroot Brownies

Ingredients

  • Grated Beetroot 285g (I used the tinned one)
  • Grated Zucchini 280g (with skin, do not squeeze juice)
  • Desiccated Coconut 70g
  • Wholemeal Self raising Flour 110g
  • Unsweetened Cocoa Powder 20g
  • Coconut oil 65g
  • Organic Rice Malt Syrup 130g
  • Coconut Milk Unsweetened 100ml
  • Coconut Sugar 30g
  • Ripe Banana mashed 160g
  • Dark Choc Chips 50g
  • Baking powder 1/3 tsp
  • Vanilla extract 1 tsp

Method

  • Preheat oven to 180 degrees.
  • Mix grated Beetroot, grated Zucchini, desiccated coconut, cocoa powder and wholemeal flour in one bowl.
  • Add 1/3 tsp baking powder.
  • In a separate bowl mix coconut oil, rice malt syrup, coconut sugar and mashed banana. Add vanilla extract. Mix well.
  • Add the liquid mixture to the dry one. Mix slowly. It will be a bit runny mixture but that’s the way you would want it to be.
  • Line a rectangular baking dish with baking paper. Pour in the mixture in the dish and spread evenly.
  • Sprinkle dark chocolate chips on top.
  • Bake at 180 degrees for 30-35 mins. Until it looks well-cooked from top.
  • It will still be moderately soft n gooey underneath so let it cool down for 2 hours before you cut it into 15 slices.
