This week has not been one of the easiest weeks for me to stay on track. Our whole house was sick last week with gastro and colds and flues so it set me back a little bit.
We also had to go away for  a long weekend for a 50th wedding anniversary which is a 7 hour drive away from home. I always find it hard to stick to healthy choices when you are on the road and not in the comfort of your own home. I made sure packed the car with heaps of fruit so that myself and my 3 year old could snack on the right foods.

Luckily we were staying with my mum and she is also quite health conscious so we still managed to eat as well as we could while we were away. We traveled back on Monday on the way home for lunch, we stopped at a little bakery that I have been to before and knew that they had nice fresh salad wraps and I opted for a turkey salad wrap. If it had have been 6 months ago, I would have definitely stopped at McDonalds for a quarter pounder  meal. I am so proud of the way I am now thinking differently about food. I would much prefer the healthier option rather than the fast food option and I feel so much better for it!
Spring has sprung and the nice weather is really motivating me to get out and walk everyday. How can you not when it is beautiful outside!! My 3 year old loves when we go for a walk as we race each other and I get a bit of a run in as well.
My local health resort do boxing classes Mondays and Wednesdays at 7.30pm. I find this is a good time for me to get in a workout as both the kids are in bed. They have also put on extra classes which are Pilates on a Thursday night and Bootcamp on a Saturday morning. I haven’t tried these yet but one of my goals for this week is to try a new class to mix things up a bit. It also means that if I miss boxing for whatever reason, I can get to another class later in the week.
Our favourite recipe from the 28 day plan is the San Choy Bow. I made it with chicken mince this week and it was delicious. My husband could not get enough of it!
I’m loving the healthy mummy smoothies in the nicer weather (although they are delicious at any time of the year!) I love the strawberry smoothie mix with mixed berries and weetbix for my breakfast. I always feel I start the day the right way after I have had this! Another goal is to be more adventurous with my smoothies as I tend to stick with what I know and love.
My main aim is to maintain my weight as I have exceeded my goal weight with the lose baby weight plans. I am focusing on exercising more and trying to be as healthy as I can possibly be. This week I have lost 300g which I am wrapped with!
I hope everyone has a great week and enjoys more of the beautiful weather. I know I will be!
Cheers, Kimberley xo
