How To Make Low Fat Vegetable Frittata

When you are following a healthy eating or weight loss plan it is easy to think that your food has to be bland, complicated or tasteless (which is why on the Lose Baby Weight plans we try and show you how to make healthy eating easy and tasty).

A really easy and simple weight loss recipe to make is Vegetable Frittata – it is full of taste, nutrition, is low fat and super easy to make – see our recipe below and give it a go today

Ingredients

  • 3 x large whole eggs
  • 6 x egg whites
  • 1 x roughly chopped zucchini
  • 1 x chopped red capsicum
  • 1 x roughly chopped red onion
  • 3 large tomatoes – roughly chopped
  • 1 x cup of broccolli florets
  • 2 x chopped carrots
  • 2 x cloves of crushed garlic
  • 1/2 cup low fat and grated cheese

Directions
Heat a little oil in a pan and lightly cook the vegetables for approx 5 mins adding in the chopped tomato at the 5 minute mark then cooking for a further 2 minutes.  In a large bowl, whisk the egg and add in the cheese.

Then pour over the egg mixture over the the vegetables in the pan and cook on a light heat for 10 minutes. Next place under the grill for a few more minutes and cut into slices and serve with a big salad

Calories per serve – 390.

    Wow, I just made one of these for lunch and it was amazing! I added fresh asparagus and sweet potato. I am sooo full after only eating 1/4 of it.
