Goji Berry Nut Bar
Ingredients:
- 1 cup oats
- 1 cup cup almonds
- 1 cup walnuts
- 1 cup goji berries
- 1/2 cup shredded coconut
- 1/2 cup pumpkin seeds
- 1/2 cup dates
- 3tbsp coconut oil melted
- 1tbsp pure maple syrup
- 1tsp coconut oil
- 2 squares dark chocolate
Method:
- Reserve a 1/2tbsp of the goji berries and pumpkin seeds to sprinkle on top.
- Add all ingredients to blender and blitz until all chopped up but not too blitzed you still want some texture.
- Spread mix into a slice tin and flatten down with the back of a metal spoon until flat and smooth.
- Sprinkle the remaining goji berries and pumpkin seeds on top and smooth over them with back of metal spoon again pushing them into the slice a little an place in freezer.
- Melt the coconut oil and dark chocolate in microwave for 30 seconds checking all melted.
- Take slice out of freezer and using a ziplock bag pour the chocolate in it and snip the end and drizzle over slice. You also just use a spoon to drizzle over too!
Store in fridge or freezer. I prefer freezer as they a bit firmer and chewy!
Makes 30 squares 158 calories per square
