Lose Baby Weight- Macadamia Shortbread

Ingredientshealthy mummy smoothies

  • 125g Unsalted Butter-softened (you could use coconut butter)
  • 1/2cup Natvia Icing Sugar mix
  • 3/4cup Coconut flour
  • 1/4cup Almond meal
  • 2tsp Vanilla essence
  • 1/8cup coconut oil (melted)
  • 1/2 cup chopped Macadamia nuts
  • Dark chocolate for decoration- OPTIONAL

Method

  • Preheat oven 180 degrees Celsius
  • Line baking try with baking paper
  • Chop macadamia nuts into desired size
  • Beat(cream) together soft butter, Natvia and vanilla until fluffy.
  • Add coconut flour, Almond meal, melted coconut oil and nuts an beat until well mixed.
  • Firmly press mixture into cookie cutter mold as the mixture is very short and will crumble, then carefully push out onto baking tray
  • Bake for 12-15min or until lightly golden.
  • Allow cookies to cool completely before touching as they will crumble if moved when not cool
  • Finish with dark melted chocolate if desired
