A wise woman once said “life without chocolate is just an existence”. We could not agree more! This easy Dark Chocolate Coconut Rough recipe from our 28 Day Challenge is crunchy, creamy and delicious. Since we tried it, we wouldn’t dream of living without it!

Restrictive diets and eating plans will tell you chocolate isn’t an option. That’s where Lose Baby Weight is different: you can include healthy treats into your healthy eating plan, without the GUILT!

We’ve made our coconut roughs with dark chocolate as it has more health benefits, less fat and less sugar than milk or white chocolate, which is better for losing weight. But if you are feeling like a little extra indulgence you can also use milk or white chocolate (just remember this will change the nutritional information) – enjoy!

Prep Time: 5mins plus 3hrs freezing time

This tasty recipe requires setting time, so make ahead of time so you have a healthy snack to grab in minutes. This recipe makes 2 serves so store leftovers in the fridge or freezer.

Ingredients

  • (Makes 2 serves)
  • 2 tablespoons shredded coconut (20 grams)
  • 4 squares dark chocolate (70%) (20 grams)Screen Shot 2016-02-11 at 10.11.57 am
  • 1 & 1/2 teaspoons coconut oil (7.5 mls)
  • 1 teaspoon dried cranberries (4 grams)

Method

  • Place dark chocolate and coconut oil into a microwave-safe bowl and heat for 2 minutes (check every 30 seconds to ensure chocolate doesn’t burn) or until chocolate has melted. Stir to combine.
  • Add shredded coconut and cranberries and stir through.
  • Line a tray with baking paper. Spoon teaspoon sized mounds of mixture onto baking paper (makes about 4-6 small roughs).
  • Place tray into the fridge for 3 or more hours until set.
  • Once set, divide roughs into 2 serves.
