If you’re following a healthy eating plan, there is no need to buy those hidden sugar loaded muesli bars from the shops.  This cinnamon nut slice is the perfect alternative. At less than 100 calories per bar, it’s the not only a delicious snack but packed full of healthy ingredients too.

Ingredients

  • 1 cup sultanas
  • 1 tablespoon water
  • 2 tablespoons coconut
  • 1/4 cup almonds
  • 1/2 cup pepitas
  • 1/2 cup cashews
  • 1 teaspoon cinnamon (or more if you love cinnamon)

Chocolate drizzle

  • 25 grams dark chocolate (I used 75%)

 Method

  •  Line tray with baking paper and set aside. (I used a 20cm x 20cm baking tray)
  • Blitz sultanas and water together and set aside
  • Blitz coconut, almonds, pepitas, cashews and cinnamon until crumbly.
  • Add both mixtures together until well combined.
  • Press firmly into tray and pop in fridge/freezer to set.
  • Once set you can prepare your chocolate drizzle.

Chocolate drizzle

  •  Melt chocolate using your preferred method and drizzle over bars.
  • Pop back into the fridge to set.

Can be stored in fridge or freezer.

Recipe makes 14 bars at 86 calories per bar or 93 calories per bar with chocolate drizzle.
