For a healthy eating snack that the whole family will love, you can’t beat a wholesome cake like this.
There’s no need for any butter or sugar in a recipe like this, the natural sweetness comes from the apples and bananas.
Once completely cooled, freeze in individual slices so that you always have healthy eating snacks on hand. Simply defrost in the microwave or in the toaster.

healthy_eatingIngredients:

  • 2 cups of wholemeal self-raising flour
  • 3 tsp cinnamon
  • 2 medium ripe bananas, fork mashed
  • 2 red apples, grated, with skin left on
  • 1 egg
  • Water, as required
  • ¼ cup walnuts
  • Olive oil spray to grease the pan

Method:

  • Heat the oven to 150C and spray a loaf tin with olive oil to grease.
  • Place the flour, cinnamon, banana, apple and egg into a bowl and mix with a wooden spoon.
  • Add enough water to make the dough into a rough sticky ball.
  • Place the dough into the loaf tin.
  • Place the whole walnuts on the top of the loaf.
  • Bake for 50 minutes or until a skewer inserted into the centre comes out clean.
  • Allow to cool down in the tin for 10 minutes.
  • Invert onto a wire rack to cool further before slicing.

Makes: 8 slices. Calories per slice: 213.
