When we need a tasty treat at the last minute, it can be tempting to grab a ready-made cake or packet of biscuits, which are generally highly processed, low in nutrition and high in calories. This delicious dessert is ready in minutes and good for you!
The cake itself is simple but packed with nutrition, with the use of high-fiber wholemeal flour and anti-oxidant rich raw cacao powder. The coconut oil adds moisture and also helps to stabilize blood sugar levels to help control unhealthy cravings.
Tip #1: If you don’t want to use the banana crème frosting, you may use chocolate icing from any other Lose Baby Weight recipe.
Tip #2: If you don’t have a microwave ‘baking’ ring, you can use a small round ceramic dish with a glass placed in the middle.
Chocolate Cake
Ingredients

  • 1 cup wholemeal self raising flour
  • ½ cup full cream milk
  • 1 tsp pure vanilla extract
  • 2 eggs
  • ½ cup NatVia (or equiv of preferred natural sweetener)*
  • 3 tbsp. raw cacao powder
  • 3 tbsp. virgin coconut oil, melted
  • 1 250g tub reduced-fat smooth ricotta
  • 1 ½ tbsp. pure maple syrup
  • 1 ripe banana, mashed
  • ¼ tsp pure vanilla extract
  • 2 tsp fresh lemon juice
  • Dark chocolate to decorate (optional)

Method
To remove excess moisture, place ricotta in absorbent paper towel (approx. 6-7 sheets thick), fold over and let sit a few minutes.
Combine flour, NatVia and cacao. Dry whisk to combine.
Add milk, vanilla, eggs, and coconut oil and mix well.
In a microwave cake ring, cook on high for 5 minutes*. The cake may feel a little moist, especially on the outside, but this should decrease as cake cools.
Turn onto a wire rack to cool.
In a mixing bowl, mash banana and pour lemon juice over the top (this will stop the banana from browning)
Add ricotta, maple syrup and vanilla and mix until thoroughly combined.
Spread over cake to serve and sprinkle with chopped dark chocolate (optional)
*If sweetener is changed this may effect cooking time.
