28 Day meal

Ingredients

(for 1 serve)

  • 100 grams of chicken breast fillets
  • 1 teaspoon honey (5 mls)
  • 1 teaspoon soy sauce, salt reduced (5 mls)
  • 45 grams of wide rice noodles
  • 1 teaspoon extra virgin olive oil (5 mls)
  • 1/4 brown onion (25 grams)
  • 1/2 teaspoon fresh ginger (2 grams)
  • 1/2 head bok choy (100 grams)
  • 1 tablespoon cashew nuts, unsalted (10 grams)
PLEASE NOTE: When preparing recipes please use the specific ingredient quantities as outlined in brackets i.e. grams/mls etc. Measurement conversions e.g cup quantities or tablespoons are given as a guide only.

  • Cut the chicken into 2cm pieces. Grate the ginger.
  • Combine the honey, soy sauce and ginger. Mix through chicken and allow to marinate for a few minutes.
  • Cook the rice noodles according to packet directions.
  • Heat the oil in a wok or non-stick fry pan over medium-high heat and add diced onion to sauté for a minute.
  • Roughly chop the Bok Choy and add the stems to the pan with the chicken and marinade. Stir fry for 5 minutes or until chicken is cooked through.
  • Add the Bok Choy leaves just before the chicken is ready and cook for a further minute until wilted.
  • Add the drained rice noodles and combine well. Serve with chopped cashews on top.
