healthy_eatingWhile they might not be an everyday food when you are trying to lose weight, there are sausages and there are sausages.
The cheap snags from the supermarket are not going to cut it if you are trying to eat healthy food.
Often they are quite fatty and don’t contain the highest quality ingredients.
So head to the butcher or even the gourmet or organic section at the supermarket and choose some lean, high quality, low fat sausages.
Any type of sausage will work for this dish, but I tend to lean towards the lamb or beef varieties, as that’s what my family prefers.
You can also use ANY vegetables you like for this dish, so long as they can be cooked in the oven. So think of it as a good excuse to clear out your vegetable crisper when you cook this meal.
Today I’ve used sweet potato, red onion, broccoli and carrot. It might look a bit crazy in the photo but trust me, it tastes amazing.
Why not add in some cherry tomatoes (add these half way through the cooking time), some yellow squash, chopped pumpkin, olives, eggplant, zucchini, corn on the cob – anything you fancy.
It’s very important not to skip the lemon in this dish. It truly makes the meal sing and you will notice the citrus flavours when you tuck in.
The stock brings it all together and keeps everything from drying out.Try this out and I guarantee it will become a family favourite.

Ingredients:
  • 8 good quality, lean sausages
  • 1 tbsp olive oil or coconut oil
  • 3 cloves of garlic, peeled and finely chopped
  • 1 medium sweet potato, peeled and cut into chunks
  • 2 red onions, peeled and cut into chunks
  • 1 small head of broccoli
  • 1 cup of chicken or vegetable stock
  • 2 tbsp dried rosemary
  • Salt and pepper to taste
  • Juice and zest of one lemon
Method:
  • Preheat your oven to 200C.
  • If you have one, use a dish that can go from the stove top into the oven.
  • Heat the oil in the dish over medium/high heat.
  • Add the garlic and the onions and stir fry for around 3 minutes.
  • Add the stock and bring it all together for a further 3 minutes.
  • Add all of the veggies and the sausages. Season well and add the rosemary.
  • Place in the oven for 30 minutes.
  • Give everything a stir and then add your lemon juice and zest before stirring again.
  • Return to the oven for a further 30 minutes or until the sausages have browned and the vegetables are golden.
