Stir fries are a fast, easy way to provide a nutritious meal for the family that is suitable to include in your healthy eating plan when you’re trying to lose pregnancy weight.
Stir fries are a good way to include a wide variety of vegetables in your diet with everything from baby spinach to cauliflower, capsicum, green beans and baby corn all being suitable to throw in the wok.
Apart from vegetables, lean proteins like chicken breast, tofu or lean beef are all good to include in your stir fry, as well as metabolism boosting spices and ingredients like chilli flakes or fresh chilli.

Ingredients:

  • 400 grams skinless chicken breast, chopped into small-medium stir fry pieces
  • 1 red capsicum, deseeded and chopped into strips
  • 1 large carrot, sliced
  • 1 small brown onion, sliced
  • 1 small head of broccoli, chopped
  • 1 red chilli, deseeded and sliced into small pieces
  • 2 cloves garlic, crushed28_day_challenge
  • 1 tablespoon ginger, crushed
  • 1 tablespoon sesame oil
  • Quarter cup salt-reduced soy sauce
  • 2 tablespoons honey

Method:

  • Put the chicken, honey and soy sauce in a bowl, cover and let marinade in the fridge for an hour.
  • Heat the sesame oil in a hot wok and add the chicken pieces (without the marinade) and cook for 3-4 minutes until the chicken pieces turn white.
  • Add the onion, ginger, garlic, broccoli, chilli, capsicum and carrot, and stir fry for another 4-6 minutes until the vegetables begin to soften and the chicken browns.
  • Add the rest of the marinade to the wok and toss to coat all the ingredients.
  • Once the chicken is cooked through and the vegetables are soft, serve immediately.
