Today we are sharing a super delicious dessert recipe from the 28 Day Challenge.
Vanilla Coconut Tarts
Ingredients (Makes 2 serves.)
- 2/3 cup rolled oats (60 grams)
- 2 tablespoons peanut butter (40 grams)
- 2 teaspoons water (10 mls)
- 2/3 cup Greek reduced fat, natural yoghurt (160 grams)
- 2 teaspoons maple syrup (10 mls)
- 1 teaspoon vanilla extract (5 mls)
- 2 teaspoons shredded coconut (5 grams)
Method
- Combine rolled oats, peanut butter and water and mix well. Divide between two lined muffin holes and press firmly into bases.
- Combine yoghurt, vanilla and maple syrup and pour evenly over the bases. Sprinkle tops with coconut and place in the freezer for an hour or until firm.
- Defrost for a few minutes before serving.
- One tart makes one serve.
