Vanilla Coconut Tarts

Ingredients (Makes 2 serves.)tarts1

  • 2/3 cup rolled oats (60 grams)
  • 2 tablespoons peanut butter (40 grams)
  • 2 teaspoons water (10 mls)
  • 2/3 cup Greek reduced fat, natural yoghurt (160 grams)
  • 2 teaspoons maple syrup (10 mls)
  • 1 teaspoon vanilla extract (5 mls)
  • 2 teaspoons shredded coconut (5 grams)

Method

  • Combine rolled oats, peanut butter and water and mix well. Divide between two lined muffin holes and press firmly into bases.
  • Combine yoghurt, vanilla and maple syrup and pour evenly over the bases. Sprinkle tops with coconut and place in the freezer for an hour or until firm.
  • Defrost for a few minutes before serving.
  • One tart makes one serve.
