Well they will love this Feta Meatball With Hidden Veggie Pasta Sauce. Only 226 calories a serve!

There is nothing more frustrating then trying to hide veggies and your kids can spot a tiny grated carrot in whatever you are making!
This is my family favourite and only 226 calories a serve for 2 meatballs.

Ingredients for Sauce

  • 700g Organic Passata Sauce
  • 2tbsp Tomato Paste
  • 2 Garlic Cloves
  • 1/2 Grated Carrot
  • 1/2 Grated Zucchini
  • 1/2tbsp Coconut Sugar
  • Salt and Pepper

Ingredients for Meatballs

  • 500g Heart Smart Beef Mince
  • 200g Danish Feta (more salty and use 100g for topping and 100g in the meatball mixture)
  • 1/2 cup Wholemeal Breadcrumbs
  • 1/4 cup Wholemeal Breadcrumbs for topping
  • 2 Garlic Cloves
  • Pepper
  • 2 tablespoon of Olive Oil for cooking

Method

  • Preheat Oven to 180 degrees.
  • Place all auce ingredients into a blender and blend until smooth and pour into a baking dish.
  • Place all eatball ingredients into a bowl and mix with hands until well combined.
  • Roll into 18 balls and cook in a frypan with olive oil or coconut oil until all sides are brown.
  • Once brown and not cooked all the way through place into the baking dish and sprinkle breadcrumbs and feta cheese over the top.
  • Bake for 30-40mins.
  • Can be served with wholemeal pasta, steamed greens or in mini wholemeal pita pocket bread.
