Fi has sent in a great, easy to prepare recipe for healthy Orange & Poppyseed Muffins. Make a batch to have on hand when you need a tasty snack in between main meals.
Orange and poppy seed muffins
INGREDIENTS

  • 1 large whole orange
  • 1/2 cup olive oil (or coconut oil)
  • 3 eggs
  • 1/4 cup rice malt syrup (can also use honey or 3/4 cup coconut sugar)
  • 1.5 cups wholemeal self raising flour
  • 2 tablespoons poppyseeds
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup skim milk (or milk of choice)

METHOD

  • Preheat oven to 180C, 160C for fan forced.
  • Lightly grease 12 hole of a muffin pan.
  • Place whole orange in a food processor and purée (I only used half the orange rind) add other ingredients and process until well mixed. Do not over mix.
  • Spoon mixture into prepared muffin tray.
  • Bake for 20-25 minutes
  • Turn out onto a cooling rack.

Serves 12, 203 calories per serve.
