This Meanie recipe is another one of my favourites from the Challenge and only 240 calories!”

Easily increase the ingredients to serve the whole family in the morning.

Ingredients

  • 1/4 small red capsicums (25 grams)
  • 1/4 brown onions (15 grams)
  • 1 wholemeal english muffin
  • 100 grams baked beans, salt reduced

meaniesMethod

  • Dice the onion and capsicum into small pieces, place in a small mixing bowl.
  • Add the baked beans to the mixing bowl and combine.
  • Cut the muffins in half and using a griller, toast the bottom side of each muffin half.
  • Spoon the bean mixture on top of each half and then place under the grill for 5-10 minutes or until warmed through and golden brown.
  • Place on a plate and serve immediately.

Serves 1
240 calories and 12.7g of protein.
