We all know that deprivation can lead to healthy eating sabotaging behaviours like junk food binges so having a couple of recipes up your sleeve for sweet treats that are both healthy AND sugar free, makes sense.
These three biscuit recipes are refined sugar free, packed with goodness and absolutely delicious. Perfect with a cup of tea as a mid-morning snack, to take to an afternoon get together or for the kids lunchboxes.

Sugar Free Peanut Butter Cookies

Ingredients
  • 1 cup wholemeal plain flour, sifted
  • 1/2 cup natural peanut butter (look for one that has 100% peanuts on the label)
  • 1/4 cup raw honey
  • 1 egg
  • 1.5 tsp baking powder
  • 1 tsp natural vanilla extract
  • pinch of salt
Directions
  • Preheat the oven to 180c
  • Place all ingredients into a food processor or blender
  • Process on ‘low’ till combined
  • Scoop out tablespoon sized dollops of batter and roll into balls
  • Place balls onto a baking paper lined baking tray and flatten with the back of a spoon
  • Place in the oven for 10-15 minutes or until starting to turn golden

Sugar Free Coconut Cookies

Ingredients
  • 1.5 cups of wholemeal plain flour, sifted
  • 1/2 cup unsweetened, desiccated coconut
  • 1/2 cup dates, pitted and diced
  • 1/2 cup low fat butter, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
Directions
  • Pre-heat oven to 180C
  • Combine all ingredients in a food processor or blender
  • Process on low till just combined
  • Scoop out tablespoon sized dollops and roll into balls
  • Place on a baking paper lined baking tray and flatten slightly
  • Bake for 15-20 minutes or until golden

Makes 12 cookies – Cal per cookie – 180

Sugar Free Chocolate Cookies

Ingredients
  • 1.5 cups wholemeal plain flour, sifted
  • 1/2 cup rolled oats
  • 1/2 cup dextrose (pure glucose powder)
  • 1/2 cup low fat butter, melted
  • 1/4 cup cocoa powder
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
Directions
  • Preheat oven to 180C
  • Place rolled oats into a food processor or powerful blender
  • Process until a coarse powder is formed
  • Add flour, dextrose, cocoa powder and gently combine
  • Add butter, egg and extract and process again
  • Scoop out tablespoon sized dollops of batter and roll into balls
  • Place balls on a baking paper lined baking tray and flatten slightly
  • Place into the oven and bake for 15-20 minutes or until firm
