weight_loss_recipesHere is a delicious healthy eating salad recipe sent in by Cassie Balo which looks too good not to try and is a perfect meal to help you lose pregnancy weight – or just to live a healthier life – plus is a great lunch box recipe if you are back at work

Ingredients

 

  • 1 skinless chicken breast
  • 3/4 litre cold chicken stock liquid
  • 1 lemon
  • red capsicum
  • green capsicum
  • celery
  • spinach
  • red onion
  • snow peas
  • crunchy asian noodles

put the cold stock into a pot and add a slice of lemon and the chicken breast. Poach until cooked.
Next, cut up veggies and once chicken is cooked, shred with a fork and place on top of salad and top with the crunchy noodles
Then use this yummo dressing:

  • dash of vinegar
  • 1 teaspoon of minced / crushed garlic
  • a few drops of low salt soy sauce

Mix to your desired taste and drizzle on top.
