It may be chilly outside, but who ever says no to ice-cream?  These low fat, creamy Neapolitan ice-cream stacks are AMAZING. Trust us when we say that the kids will be go crazy for them.  At only 82 calories each, you will too. neapolitan ice-cream stack

Ingredients:

Chocolate layer

  • 1 medium to large banana
  • 2 teaspoons cacao (can use cocoa)
  • 1 medjool date, pitted
  • 2 tablespoons milk

Vanilla layer

  • 1 medium to large banana
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon milk
  • 1/4 teaspoon coconut essence

Raspberry layer

  • 1 small to medium banana
  • 1/4 cup frozen raspberries
  • 2 tablespoons milk
  • 1 tablespoon maple syrup

Method:

Chocolate layer

  • Blend all ingredients together until smooth and creamy.
  • Spoon into silicon muffin moulds or muffin patty cases and pop into freezer to set.
  • Once set, you can start the vanilla layer.

Vanilla layer

  • Blend all ingredients together until smooth and creamy.
  • Spoon on top of the chocolate layer and pop back into freezer to set.
  • Once set, start the raspberry layer.

Raspberry layer

  • Blend all ingredients together until smooth and creamy and spoon on top of the vanilla layer then pop into the freezer to set.

Keep stored in freezer.

We suggest you take these out of the freezer around 10 minutes before you wish to serve them as the freeze quite solid.
