Bacon and banana – two of our favourite things! Our Maple Syrup and Bacon Crumpet is the perfect combination of sweet and salty and at only 273 calories, we think this is a pretty great way to start our day!
Maple Syrup & Bacon Crumpet
Increase in quantities to share with the whole family.
Ingredients
- 1 crumpets, wholemeal (50 grams)
- 2 rasher bacon, lean & trimmed (54 grams)
- 1/4 teaspoons cooking oil spray (1 mls)
- 3/4 small bananas (65 grams)
- 2 teaspoons maple syrup (10 mls)
Method
- Heat a non-stick fry pan with a spray of cooking oil spray over medium-high heat.
- Cut each bacon rasher into 2-3 long strips and when the frying pan is hot, add the bacon in one layer.
- Cook until the underside is golden then turn the pieces over and cook on the other side.
- Slice the banana and toast the crumpet.
- When the bacon is cooked, push the pieces to the edges of the frying pan and add the banana in the centre. Drizzle with half the maple syrup and lower the heat.
- Cook for a minute until very lightly golden.
- Arrange the bacon and banana slices on the toasted crumpet and drizzle the remaining maple syrup over the top.
