Treats like lemon curd can be included in your healthy eating plan, and this recipe for homemade lemon curd has less calories than store bought lemon curd, which is typically made with white sugar and other processed ingredients.
Lemon curd can be used in a number ways. Spread on wholemeal crumpets or sourdough toast, or serve alongside healthy, homemade pancakes or muffins.

Ingredients:

  • 4 medium sized eggs
  • 100 grams of honey
  • 1 tablespoon lemon zest
  • 5 tablespoons of virgin coconut oil
  • Half cup lemon juice

Optional Extras:

  • Egg yolks can be used instead of whole eggs
  • Oranges can be used instead of lemons, to create ‘orange curd’

Method:

  • Whisk the eggs in a medium sized bowl.
  • Add all of the other ingredients and whisk until the ingredients are combined and there are no lumps.
  • Transfer ingredients into a saucepan and simmer over low-medium heat.
  • Take off the heat and strain the lemon zest out of the mixture, either using a strainer or a sieve.
  • Once all the zest has been removed, cover with cling wrap or a lid and place in the fridge to cool.
  • This curd will keep for up to two weeks if stored in the fridge in a sealed container (like a jar).
