Lose Baby Weight- Lemon Pie

Ingredients

Base

  • 1 cup almond meal
  • 2 tbsp coconut oil melted
  • 1 egg yolk
  • 2 tbsp coconut flour

ResultsLemon filling

  • 3 egg yolks
  • ¼ cup rice malt syrup
  • ¼ cup lemon juice
  • ¼ cup coconut oil melted
  • 2 tsp coconut sugar

Meringue topping

  • 4 egg whites
  • 4 tsp coconut sugar

Method

  • Pre-heat oven to 160 degrees C

Base

  • Combine almond meal, 1 egg yolk, coconut flour and melted coconut oil into a bowl and mix until it forms a crumbly biscuit texture
  • Roll in glad wrap and pop in the fridge for 20 minutes
  • Spray a spring form round cake tin or (as I used) a spring form quiche tin with coconut oil spray
  • Press base dough mixture into your tin to form the base, making sure to get an even coverage
  • Place in pre-heated oven for 10-15 minutes until base is golden brown
  • Remove and set aside to cool
  • Leave oven on for meringue mixture below

Filling

  • In a saucepan mix together all ingredients for the lemon filling until well combined
  • Over a medium heat cook, stirring frequently, for 8-10 minutes until mixture has thickened up
  • Pour filling over the cooled base and place in fridge

Meringue top

  • Place egg whites and coconut sugar into a bowl and whisk on high speed until stiff peaks form (2-3 minutes)
  • Remove base and filling from fridge and spread meringue on top of the lemon filling
  • Place into pre-heated oven for roughly 10 minutes until meringue mix is golden brown
  • Remove from oven, put in fridge until completely cooled, cut, serve and enjoy

Serves 8-12
12 servings = 176 calories
8 servings = 263 calories
