We recently ran a Healthy Baking Competition on our Private Facebook Support Group for REAL MUMS to send in their healthy and yummy baking recipes that can be enjoyed while following a healthy eating plan and it was a HUGE success – so we have decided to run it again!
Today we have the first AMAZING and YUMMY recipe for you to try, Healthy Choc Mousse Cups and a BIG Thank You to Laura Johnson for submitting her recipe.
Ingredients
Chocolate Cups
- 100g Dark Chocolate
- 1Tbs Coconut Oil
Mousse
- 2 Ripe Bananas
- 1/3 Cup Greek Yogurt
- 2Tbs Cocoa/Cacao Powder
- 1Tbs Coconut Oil
- 1Tbs Natural Sweetener (optional)
Method
- You need a Silicon mini muffin tray (must be very flexible so chocolate cups pop out)
- Melt the 100g dark chocolate and coconut oil in microwave until smooth
- Use a pastry brush and coat each mini Muffin case with chocolate, make sure each one has a good coating especially around sides.
- Put in fridge to set
- If any chocolate left you can put this in the mousse.
- To make the Choc Mousse put all ingredients into blender and any leftover melted chocolate from cups (make sure it’s not hot) and blend until smooth.
- Remove chocolate cases from fridge and fill each one with mousse mixture.
- Put back in fridge (overnight) to set then can decorate with grated dark chocolate (optional).
- Carefully remove from the muffin tray and enjoy!!!
