Ingredients 

  • 1 cup wholemeal flour
  • 2 tbsp vanilla Healthy Mummy Smoothie Mix
  • 2 tsp cinnamon
  • 1/4 cup agave syrup
  • 1/2 tsp baking powder
  • 3 bananas, leave half for topping
  • 4 egg whites
  • 3/4 cup Greek yoghurt
  • 2 tbsp cacao powder
  • 1/2 cup dark chocolate chips
  • 1/2 cup frozen raspberries

Method

  • Preheat oven to 180C and line a loaf tin with baking paper.
  • In one bowl, mix flour, smoothie mix, cinnamon, cacao, baking powder and agave syrup.
  • In a second bowl, mash 2 and 1/2 bananas, leaving half for the top. Add in egg whites and yoghurt and mix.
  • Slowly pour the wet ingredients into the dry ingredients and stir until combined. Fold through chocolate chips and raspberries.
  • Spoon mixture into the lined tin. Top with remaining sliced banana.
  • Bake for 55-60 minutes, or until a skewer inserted comes out clean. Leave in tin for 5 minutes to rest before cooling on a wire rack.
  • Serves 18, 113 calories per slice
