Here is another delicious submission from our Private Facebook Support Group where members can send in their own super creative, healthy and YUMMY Husband Approved recipes that can be enjoyed while following a healthy eating plan.
A big thank you to Kristy Reid who has sent in this SUPER yummy Thai Style Sausage Roll recipe.
Ingredients
- 3 sheets puff pastry reduced fat
- 500g chicken mince
- 1/2packet (150g) coles packet fresh coleslaw mix (no dressing) can use any brand shredded coleslaw
- 2 tbs sweet chilli sauce or to own taste
- 6 slices coles wholemeal sandwich slice bread (made in to crumbs)
- 1tbs coconut sugar
- 1 cup baby spinach
- 1 diced large brown onion
- 1tbs mixed dry herbs to taste (i used italian style)
- 1/4 cup fresh coriander
- salt pepper to taste
- 2 small eggs
- Note** be liberal with herbs /seasoning as u will need the intensity as pastry will mask alot of the flavour
Method
- Defrost puff pastry on bench then cut each in half length ways
- In food processor place onion, coleslaw,herbs,salt pepper,baby spinach,sugar,coriander and blend til finely chopped. Empty into a bowl then:add mince, crumbs, egg and sweet chilli and mix through by hand using gloves.
- Placing your 6 puff pastry sheets in front of you .Either use piping bag or spoon place the mix length ways down one half of each puff pastry strip like a sausage shape.
- Once done roll each one over tightly in to a roll and seal edge with a little skim milk and if u like wipe a tiny bit milk on top so they brown nicely. Then cut each length in half so 12 rolls in total.
- Place in 180 deg oven on greased/lined tray for approx 20mins or until golden brown and cooked through
- Enjoy!
