Healthy Mummy member Shelley Rob has shared her family’s favourite cookie recipe and we LOVE them. These honey cookies with a delicious raspberry drizzle are perfect to enjoy with a cup of tea or to pack in the kids lunch boxes. At under 100 calories each there is no need to feel guilty if you add them to your weight loss meal plan.
Cookie Ingredients
- 1 cup rolled oats
- 2 tablespoons plain flour
- pinch salt (optional)
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 3 tablespoons melted coconut oil
- 1/2 cup milk of choice (I used plain full cream. You will need to adjust calories if using something different)
Cookie Method
- Line baking tray and pop aside.
- Preheat oven to 180 degrees celcius.
- Combine oats, flour and salt then mix in honey, vanilla, coconut oil and milk until well combined.
- Place heaped spoonfuls of mixture into tray. Flatten to a thickness of a few millimetres.
- Bake in pre-heated oven for approx 10 minutes and the edges are starting to brown (this may vary depending on your oven).
- Remove from oven and place on a wire rack to cool.
Raspberry drizzle ingredients
- 1/2 cup frozen raspberries
- 1/2 tablespoon water
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
Method for Raspberry Drizzle
- Place all ingredients into a small saucepan over a medium/high heat then bring to the boil.
- Once boiling, reduce to simmer and stir constantly for 3-4 minutes until thickened and well combined. Be sure to squish the raspberries with the back of your spoon as you mix for a better consistency.
- Remove from heat and allow to cool.
- Once cookies and raspberry mixture have cooled, drizzle raspberry mixture over cookies then enjoy!
Makes 9 large cookies at 91 calories each.
