It is often hard to think of healthy different vegetarian meals that you can incorporate into your healthy eating plan that the whole family will enjoy.
Today we have these quick and easy reader recipe Healthy Veggie Burger Patties for you all to try. You can serve them with toasted wholemeal bread or burgers, have them in a wrap or even go bunless.

Ingredients

  • 360g potatoes, peeled and grated
  • 180g sweet potato, peeled and grated
  • 1 onion, diced
  • 1 tsp. minced garlic
  • 1 carrot (100g), grated
  • 65g frozen corn
  • 65g frozen peas
  • 150g wholemeal self raising flour
  • 50ml water

Method

  • Fry the onion and garlic until golden brown and set aside to cool.
  • Combine 10 tsp. of wholemeal self raising flour with the water to form a paste.
  • Place the grated potato in a bowl along with the flour paste and the rest of the self raising flour. Mix to combine.
  • Add the sweet potato, carrot, corn, peas and onion and mix well. Season with salt and pepper if desired.
  • Form mixture into 6 balls.
  • Heat a non stick fry pan over medium heat. Place balls into the fry pan and flatten to make into burgers.
  • Cook on each side for 5-10 minutes until golden brown.

Makes 6 burger patties
