Lose Baby Weight- Strawberry Mousse Pie

Ingredients

Base

  • 1 cup almond meal
  • 1 cup rolled oats
  • 1/3 cup of coconut oil melted
  • 1/4 cup of cacao
  • 3tbsp honey
  • 1 cup strawberries sliced

Mousse

  • 1  1/2 small avocados
  • 1 cup light coconut cream
  • 150g dark chocolate melted
  • 1 tbsp cacao
  • 1 tbsp vanilla essence
  • 2 tbsp honey

Method

For the base

  • Preheat the oven to 180 degrees
  • Line a baking dish with baking paper
  • Mix the almond meal, oats, coconut and cacao together
  • Melt the honey and coconut oil together and mix with the dry ingredients. This will form the crumb for the base.
  • Press crumb into the pan and bake for around 10 – 15 minutes

For the mousse

  • Melt the chocolate and leave to cool slightly
  • Blend the avocado and coconut cream together
  • Add the melted chocolate, vanilla essence, cacao and honey to the avocado cream and blend together.
  • Arrange the sliced strawberries over the pie crust and spread the mousse evenly on top
  • Place in the freezer to chill and firm up
