We spotted a photo of this AMAZING healthy snickers bar in our private Healthy Mummy Facebook Community and just knew we had to share it – and make it…..ASAP!
Carley Mahr has kindly shared the recipe with us and it is soooo delicious.  Even better than the real snickers bar (we think) and jammed packed full of yummy good fats.  healthy snickers barWith chewy caramel and crunchy peanuts, this bar is mouth-wateringly delicious. However we do recommend that you have it as a healthy indulgent treat and not an every day snack.

Healthy Snickers Bar

Base Ingredients:

  • 2 cups of almond flour – (can also use almonds & ground into a flour)
  • 3 tablespoons of rice malt syrup
  • 2 tablespoons coconut oil (liquified)
  • pinch of himalayan rock salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons natural peanut butter

Filling Ingredients:

  • 3 cups of pitted medjool dates (can also use regular dates just soak in boiling water for 30mins)
  • pinch of himalayan rock salt
  • 2 tablespoons coconut oil
  • 2 tablespoons natural peanut butter
  • 1/2 cup unsalted roasted peanuts

Chocolate Coating

  • 3 tablespoons rice malt syrup
  • 2 tablespoons cacao powder
  • 4 tablespoons coconut oil (liquified)

Method:

1: Place all of the ingredients for the base into a food processor & blend until it resembles a biscuity dough.

2: Press the dough evenly into silicon moulds, or a square/rectangular pop out tin & place in the freezer while you prepare the filling. (I used a mini loaf silicon mould to shape it into the bar shape)

3: Roast the peanuts until they are lightly fragrant – do not over roast. While they are roasting…move to step 4.

4: Using a clean food processor, place all of the filling ingredients except the peanuts and blend for a while until the mixture turns into a sticky caramel like consistency. Add the peanuts to the mixture & pulse a few times just to mix them in so that the chunks are kept.

4: Evenly press the caramel mixture onto the base & place back into the freezer for at least 4hrs to set.

5: Place all of the chocolate coating ingredients into a mixing bowl & whisk together until it forms a runny consistency.

6: Drizzle & spread the chocolate over the top of the caramel.

TIP: I make the chocolate coating once the mix has completely set in the freezer.   You could also drizzle a small amount of chocolate coating onto the bottom of the mould & let it set in the freezer until it completely sets before pressing the base ingredients into it. 

They are best stored in the freezer in an airtight container.

Serves: 12 at 380 calories per serve.  Each serve is approx 100g. (A Mars Snickers bar has 488 calories per 100g)

We recommend you half the portion sizes into 50g serves at 190 calories each, which makes these delicious snickers bars a perfectly acceptable Healthy Mummy snack, if you’re following a healthy eating weight loss plan.
