Lose baby Weight- Healthy Healthy Persian Love Cake

Ingredients

  • 320g almond meal
  • 390g coconut sugar
  • 1 tsp salt
  • 120g coconut oil
  • 2 eggs
  • 250g greek yoghurt
  • 1 tablespoon nutmeg – ground
  • Handful of pistachios – roughy cut

Method

  • Preheat the oven to 180 degrees.
  • Mix the almond meal, salt, coconut sugar on a bowl – add the  coconut oil and run through fingers to incorporate.
  • Line a springform pan with baking paper on bottom and sides and press half the mix onto the bottom. Set to the side
  • Add the remaining ingredients – except the pistachios to the other half of the dry mix and mix with beaters until well incorporated- about 3 mins.
  • Pour wet mixture into cake tin on top of the dry mix. Sprinkle top with pistachios.
  • Cook for about 35 – 45 minutes – if the top is browning and the Middle isn’t cooked, cover lightly with foil and continue to cook.
  • Let cool on bench and then transfer to fridge for a few hours.
