Healthy Peanut Butter & Vanilla Cookies

Ingredients

  • 2 1/2 cups wholemeal self rising flour
  • 2 tbsp Vanilla Healthy Mummy Smoothie Mix
  • 1 tbsp butter
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup coconut sugar
  • 1/2 cup natural peanut butter

Method

  • Mix together the butter, egg, vanilla, peanut butter and sugar.
  • In another bowl mix flour and Healthy Mummy Smoothie Mix
  • Add dry mixture to wet mixture
  • Roll into balls, lay on baking tray then flatten with fork
  • Bake at 180 for 10 minutes (or until golden brown)
  • Makes approx 20 cookies
