Lose Baby Weight-PBJ icecream

Ingredients

PB ICE CREAM

  • 4 frozen bananas
  • 1/4 cup almond milk
  • 2 tbs natural peanut butter

‘JAM’ SAUCE

  • 1/2 cup frozen raspberries
  • 1 tspn honey
  • 2 tbl water
  • 1/2 tspn cornflour
  • 2 tspn water

Method

  • Using a food processor, blend PB ice cream ingredients together until smooth. Pour into an airtight container, put lid on and place in freezer whilst you make the jam sauce.
  • In a small saucepan put raspberries, honey and water. Allow to simmer for 5 mins, crushing the berries with the back of a spoon as it cooks. Whilst berries simmer, mix cornflour and water in a small bowl then pour into berries. Take sauce off heat and stir to thicken. Allow to cool for 5 mins.
  • Take PB ice cream from freezer, pour jam sauce on top and stir through gently creating a swirl effect. Place lid back onto container and freeze for 30 mins before serving.
  • Enjoy!
