Mum of 3 Jodie Koeleman has been following the Lose Baby Weight healthy eating plans and challenges and has lost 32kg.
Today she has sent in her healthy recipe for her no fail baked risotto.  This recipe is very versatile and you can use whatever ingredients you have on hand.

Ingredients

  • 1 cup Arborio rice
  • 1 tbsp Butter
  • 2.5 cups Boiling Water
  • 2 tsp Chicken Stock Powder
  • 1 tsp Minced Garlic
  • 1 Onion- diced
  • 200g Mushrooms- finely diced
  • A handful Baby Spinach Leaves
  • 1/3 cup Grated Parmesan Cheese
  • Salt and Pepper to taste
  • Olive Oil Spray for greasing

Method

  • Preheat oven to 200°C. Spray an oven dish lightly with Olive Oil Spray
  • Put rice, butter, water and stock into oven dish and stir until combined. Set aside
  • Lightly fry garlic, onion, mushrooms and spinach in a frypan until spinach is wilted
  •  Add to rice mixture in oven dish and stir again until well combined
  • Cover dish with a lid or foil and bake for 30 minutes
  • Once cooked stir through cheese and season with salt and pepper

Serve with a salad or roasted vegetables
