These healthy hazelnut cookies are free from refined sugars and packed full of protein making them a great snack for you to enjoy (guilt free) while following a healthy eating plan
These cookies are very versatile and would work well with any kind of nut combo you like.  You could also add some raw cacao for an extra chocolatey cookie

Ingredients

  • 1 cup hazelnut meal
  • 1 cup almond meal
  • 1/2 teaspoon baking powder
  • 5 tablespoons Natvia (or preferred natural granulated sweetener)
  • 2 free range eggs
  • 2 tablespoons coconut oil (melted)
  • a good pinch of pink himalayan sea salt
  • 4 tablespoons natural almond or nut butter (I used ABC spread which is almond, brazil and cashew nut butter)
  • 50g dark chocolate chips
  • 15 hazelnuts, roughly chopped (optional)

 

Method

  • Pre-heat oven to 180 degrees (160 C fan forced) and line a biscuit tray with baking paper
  • In a bowl, mix together dry ingredients; hazelnut meal, almond meal, Natvia/sweetener, baking powder and salt until well combined
  • Then add the eggs, nut butter and melted coconut oil and mix thoroughly until well combined
  • Fold trough chocolate chips and hazelnuts if using
  • Once combined split into 16 equal parts and roll into balls. Press balls down onto pre lined biscuit tray until about 1cm thick
  • The Cookies don’t ‘rise’ or expand so ensure to press them down
  • Bake for approximately 12-15 minutes for soft cookies and up to 25 minutes for crunchy cookies
