Healthy Eating Broccoli And Fennel Soup

And our 30th winner is Claire Greenwood (@clairegreenwoodnz) for her super healthy pot of broccoli and fennel soup!
This is one of our Winter Warmer mainstays, and is one of the healthiest meals you could ever make. Not only is broccoli considered one of natures ‘miracle foods’ with its incredible antioxidant content as well as vitamin C, vitamin A, folic acid, calcium and fibre, but as a cruciferous vegetable it is also believed to prevent some cancers. Fennel is also a powerhouse of nutrition, aiding weight loss by boosting metabolism, as well as promoting a healthy digestive system.


To make your own broccoli and fennel soup, you’ll need a couple of fennel bulbs, a couple of heads of broccoli, an onion, garlic, and some chicken or vegetable stock. You could also add a leek to the ingredients to create an extra layer to the flavour. Chop all of your ingredients, and fry off the onion, garlic, fennel (and leek if you’re using it) in a large saucepan or casserole dish. Add your broccoli and stock, and bring to the boil. Simmer until the broccoli is tender. Blend with a stick blender until smooth, season to taste, and serve with a dash of sour cream on top. Delicious!
