These Double Choc Chip Muffins will make the perfect healthy afternoon treat to have with a cup of green tea while following your healthy eating plan.

Ingredients

  • 2 1/2 cups wholemeal self-raising flour
  • 1 tbsp cacao
  • 1/2 cup coconut sugar
  • 1/2 cup Dark Choc chips
  • 2 tbsp melted coconut oil
  • 1 1/4 cups skim milk
  • 1 egg
  • 1 tsp vanilla extract

Method

  • Preheat oven to 180 degrees.
  • Stir dry ingredients together in a bowl.
  • Crack egg into another bowl and whisk together with the milk then add vanilla and coconut oil.
  • Mix dry and wet ingredients together and be careful not to over mix.
  • Spoon mixture evenly into a lined muffin pan.
  • Bake for 15-20 minutes or until cooked. Check if a skewer comes out clean.
  • Cool on a wire rack.
