Here’s a blast from the past. Who remembers the Chokito bar? A big hit in the 70s, it had chocolate, caramel fudge and crisped rice. YUM! Not so healthy though, so Healthy Mummy Krista has cleverly created this healthy version in a bite-sized ball. Don’t they look delicious?

Healthy Chokito Balls
Ingredients
- 1/3 cup coconut oil, softened
- 2 tbsp hulled tahini
- 2 tbsp rice malt syrup
- ½ cup almond meal
- ¼ cup rice puffs
- 50g dark chocolate (70% or higher)
Method
- Caramel Filling: Mix coconut oil, tahini and rice malt syrup in a bowl until smooth. Stir in the almond meal. Place in the fridge for 1 hour until firm.
- Roll into teaspoon sized balls and coat in the rice puffs. Put in the freezer for at least 10 minutes.
- Melt the chocolate and dip the balls in, coating well. Pop in the fridge for at least 1 hour or until the chocolate is set.
- Will keep in the fridge (in a sealed container) for up to 2 weeks, or in the freezer for 3-4 months.
Recipe makes 14 serves, 120 calories per serve
