Lose Baby Weight- Choc Filo Rolls

  • 1 pink lady apple, peeled and chopped
  • 1 tbls coconut sugar
  • 3 tbls water
  • 2 sheets fresh filo
  • 2 tbls coconut oil-melted
  • 1/4 cup mini/regular dark chocolate chips

Method

  • Pre-heat oven to 160 deg
  • In a small saucepan place apples, water and coconut sugar, stir to combine
  • Heat on a low-medium heat until apple is soft (about 5 minutes)
  • Put into a bowl allow to cool almost completely
  • Mix in the choc chips
  • Lay 1 sheet of filo on a chopping board, brush half (vertically) with coconut oil, fold over to make a rectangle, cut in half (horizontally) to have 2 small rectangles.
  • Repeat with second sheet of filo
  • Divide apple mixture into 4 equal parts.
  • Spread 1 part apple mixture along the shortest side of filo, brush with coconut oil, roll tightly to make a “sausage” shape
  • Repeat with remaining 3 rectangles.
  • Place on baking tray lined with baking paper and bake for approx 8-10 minutes in 160 degrees,
  • Put under grill for 20-30 seconds to brown at the end. (Keep an eye on it so it doesn’t burn)
