Microwave cakes are a great way to satisfy your sweet tooth quickly. But the majority of the “mug cake” recipes that you find on the internet are packed full of refined sugar and unwanted calories that will put a damper on your efforts while losing baby weight.
But – thankfully – there are those rare, wondrous recipes that not only taste great but wont ruin your weight-loss goals. Today we have this super quick, healthy and refined sugar free microwave mug cake that will satisfy your cake cravings without the guilt.
Mug Cake

Ingredients

  • 1/2 green apple (skin removed and diced)
  • cinnamon (as much or as little as you want)
  • 1tsp vanilla extract
  • 1tbsp honey
  • 3tbsp SR wholemeal flour
  • 3tbsp unsweetened almond milk
  • Natural yoghurt and honey for the topping is optional

Method

  • Put the diced apple in a mug and microwave until soft, about a minute
  • Add all the rest of the ingredients and mix, if you need to add a little more milk for a nice batter add a touch more
  • Cook for 2 minutes in the microwave
  • Tip out on a plate and top with yoghurt, a little honey and shake of cinnamon

Serves 1
