Lose Baby Weight- Almond Berry Cake

28_day_challengeIngredients

  • 200g Almond meal
  • 55g Coconut oil
  • 70g Pure Rice Malt Syrup
  • 3tsp Vanilla essence
  • 4 Eggs
  • 2tsp Baking powder
  • 100g Mix berries (frozen or fresh)

Method

  • Preheat oven to 180 degrees and line a baking dish with baking paper.
  • In a bowl add coconut oil, heat in microwave or mix it so its melted.
  • Add almond meal baking powder and mix it.
  • Add rice malt syrup, vanilla essence and eggs and mix.
  • Slowly add the berries and pour into your baking dish.
  • Bake in the oven for 20-25 mins until the top gets golden brown and if you insert a skewer it comes out clean.
