A great way to be really organised for the 28 Day Weight Loss Challenge or your healthy eating plan is to have a bunch of healthy snacks on hand so that in between your main meals you’re not reaching out for a chocolate biscuit as that’s all you have to choose from.
Here we have listed our Top 5 Snacks under 200 calories, so stock up, get prepared, and save yourself from those unwanted craving-induced splurges.

1. Vanilla Fruit Parfait – under 200 calories per serve

A tropical inspired fruity snack. Increase quantities to have in the fridge when you want a snack in a hurry or to serve to the whole family after dinner.

 Ingredients (Makes 1 serve)
    • 1/3 cup pineapple, fresh or tinned (50 grams)
    • 1/4 cup blueberries, fresh or frozen (60 grams)
    • 1 teaspoon Natvia (1 grams)
    • 1 free-range eggs (50 grams)
    • 5 tablespoons reduced-fat Greek natural yoghurt (100 grams)
 This is a 5 ingredients & under recipe. Please note that non-key ingredients such as salt, pepper, water, oil, vinegars, some herbs & spices, accompaniments such as side salads or vegetable sides etc are not included in the “5 & under” ingredient tally.

Method

  • Peel and finely chop the pineapple and put into a microwaveable bowl with the blueberries and sugar. Microwave on high for 1 minute then set aside to cool.
  • Separate the egg yolk from the white (keep the yolks(s) in an air tight container in the fridge to have for scrambled eggs at breakfast the next day if you like) and then in a dry non-greasy bowl, beat the egg white (using an electric whisk) on full power for a few minutes until it holds its shape when you turn the bowl upside down.
  • Spoon the yoghurt into the egg white and gently fold together.
  • Put half of the fruit into the base of a serving dish or glass and spoon the remainder gently into the yoghurt mix, then spoon the entire mix into the serving dish or glass and enjoy.
