Easter time again and one thing we cannot go past is hot cross buns!

However delicious and delightful as they are – these tasty temptations are generally high in sugar and somewhat disastrous for losing baby weight.
But not all hot cross buns are unhealthy – this genius recipe is low sugar, gluten free and just as if not MORE delicious than the store bought kind.

This recipe is a sneak peek from the 28 Day Weight Loss Challenge. This recipe makes 12 buns so share them with the family and your friends as well as storing any leftovers in the freezer to defrost and reheat in the oven when you need a healthy, sweet snack.

Ingredients

  • 1 1/2 cups almond meal (250 grams)
  • 1 cups coconut flour (125 grams)
  • 1/4 cups coconut sugar (50 grams)
  • 1/4 teaspoons ground nutmeg (0.3 grams)
  • 1 teaspoons cinnamon (1 grams)
  • 1 teaspoons ground ginger (1 grams)
  • 1/3 teaspoons baking powder (1 grams)
  • 1/4 teaspoons salt (0.3 grams)
  • 6 free range eggs (300 grams)
  • 1 cup of coconut oil (250 mls)
  • 1 cups sultanas (150 grams)
  • 2 tablespoons rice flour (20 grams)
  • 40 mls water

  • Preheat oven to 180C.
  • Line 12 muffin tins with muffin cases.
  • In a large bowl whisk eggs, coconut oil and coconut sugar until well combined.
  • Sift almond meal, coconut flour, spices, baking powder and salt into the egg mixture. Use a large spoon or spatula to stir. Fold in sultanas. The ‘dough’ will be more like a thick biscuit batter than a traditional bread dough.
  • Divide into 12 portions, gently form into balls and place into lined tins.
  • For crosses stir together rice flour and water to create a thick paste. Spoon into a piping bag or a snap lock lunch bag and snip off the corner after filling, to pipe crosses over buns.
  • Bake for 25-30 minutes until firm and golden. This recipe makes a dense bun.
