These amazing little frozen raspberry and yoghurt bites are perfect for any after dinner or late night sweet cravings. At only 50 calories each how could you resist?? If you’re following a healthy eating plan you can add these delicious little treats in WITHOUT falling off the wagon.
Filling Ingredients:
- 1/2 cup plain greek yoghurt
- 1/4 cup frozen raspberries
- 1 tablespoon maple syrup
Filling Method:
- Blitz all ingredients together and pour into mini silicon moulds or mini patty cases.
- Pop into freezer to set.
- Line a tray with baking paper and set aside.
Chocolate Coating Ingredients:
- 4 tablespoons coconut oil (melted but cool)
- 2 tablespoons cacao (can use cocoa)
- 1 tablespoon maple syrup
Chocolate Coating Method:
- Add all ingredients together in a small bowl and mix well to combine.
- Once your coating is done, remove frozen yoghurt bites from the freezer.
- Dip yoghurt bites in chocolate coating, ( I found a fork worked well) roll around a few times so each piece is well coated.
- Remove and place on baking paper lined tray.
- Pop tray back into the freezer to set. This wont take long at all and the frozen bites will start to set the chocolate coating immediately.
** If your chocolate coating starts to solidify, melt for a few seconds on low heat in the microwave or on the stove. Be sure the coating has cooled down again before dipping the yoghurt bites back in or they will start to melt. Its best to pop your yoghurt bites back in the freezer if you need to melt your chocolate coating.
Keep stored in the freezer and eat straight from the freezer.
Makes 14 mini bites, 50 calories each
